German Donor Kebab: quick service restaurant
German Doner Kebab are an international quick-service franchise with over 100 restaurants in the UK, Sweden, North America and the Middle East. The brand aim to offer customers a menu that brings quality, consistency, reliability and high standards. Their new slogan being ‘Doners worthy of the daylight’.
Iconic have been appointed for a few German Doner Kebab projects, the first of which was Bedford with franchisee Acca Food ltd. The fitout of a German Doner Kebab involves the creation of a brand compliant design, the construction and fitout of the unit, and handover for training/trade.
Our activities
Iconic are employed by the franchisee, acting on their behalf, to engage all directs and the main contractor, manage the design team, the programme, and the construction phase. Iconic also facilitate communication between the franchisee, franchise, and the landlord. Our activities included:
General contract administration
Management of contractors
Procurement
Stakeholder management
Advising on final account agreements
The challenges
A challenge on Bedford was change control – whilst the site was in construction the new HVK kitchen was being designed. The franchise and franchisee agreed they wanted the kitchen design to be up-to-date and the changes were actioned. The change was tracked and reported to the franchisee throughout.
Additionally, planning and advertisement consent was particularly challenging on the Bedford project – with both being denied twice. This was managed with temporary signage, allowing the restaurant to begin trading as anticipated. The external signage has now been instructed.
Communication is key to successful project management
In conclusion, it is important when planning a project like this, with a fair amount of potential risks involved, that the team communicates effectively. In this case open dialogue allowed for the issues with the kitchen to be clearly and calmly dealt with. Maintaining positive communication between us, the client and the team is the key to this. Operating with a set of key practices and guidelines allows us to consistently plan and work to the best of our abilities, making sure we are thorough and focused in every aspect of the job. This is the key to successful project management.
